As soon as December is upon us I can guarantee my mom will start asking for eggnog.
But this is no ordinary eggnog, this is creamy, sweet and oh so delicious! It’s super easy and fast to make and you can double up the recipe to make enough for an amazing Christmas party!
I’ve decided to add Baileys to mine because I like it even creamier! But you can swap it out for the more traditional brandy if that takes your fancy!
Ingredients
- 2 large eggs, separated
- 50-75g caster sugar
- 100ml Baileys
- 200ml full fat milk or single cream
- 150ml whipping cream
- Grated nutmeg to serve
Prep: 15 minutes
Method
- Start by whisking the egg yolks and sugar together until pale, light and fluffy. Then, gradually whisk in the alcohol followed by the milk or cream (I use cream for a thicker texture).
- In a separate bowl, whisk the egg whites until they form soft peaks.
- Fold the boozy mixture into the whites ladle by ladle.
- Finally, whip the cream until it just holds its shape and fold into the mixture.
- Serve with a sprinkle of nutmeg and enjoy!
