I love fajitas but sometimes I feel SO stuffed after the wraps – so after seeing some burrito bowls on Instagram, I thought I’d make a Mexican fajita bowl!
This is a fast midweek meal because I 100% cheated and bought Mexican chicken from M&S and ready made guacamole and salsa 🤫 but hey, we don’t always have the time to marinate for hours on end! You could always use chicken breasts and cook with the veg instead!
Ingredients:
- M&S slow cooked Mexican chicken thighs or 3 chicken breasts
- 3 peppers
- 1 red onion
- 3 sticks celery
- Tin of Sweetcorn
- 1tsp smoked paprika
- 1tsp cumin
- 1tsp onion granules
- 1.5tsp garlic granules
- salt & pepper
To Serve:
- Guacamole
- Salsa
- Lettuce
- Anything else!
4 Portions Prep Time: 5 minutes Cooking Time: 30-40 minutes Total time: 35-45 minutes
Method
- Preheat the oven to gas mark 6, 400F, 200C
- Slice the peppers lengthways and large chop the onion and celery, mix well on a baking sheet with the sweetcorn, 1tbsp oil and all the spices. Cook in the oven for 35-40 minutes until veg are cooked through and starting to brown.
- If using my cheats chicken, follow the instructions, otherwise add 3 chicken breasts to the veg and cook for 30 minutes until the juices run clear.
- And that’s all the cooking involved! Slice good old iceberg and place on the bottom of your dish and add the veg, chicken and toppings!
