Macaroons can be expensive to buy so it surprised me when my friend, Katrina sent over this recipe for rose macaroons. They’re so cheap and easy to make and taste great! Thanks Kat!

Ingredients

  • 50g ground almonds
  • 20g caster sugar
  • 110g icing sugar
  • 60g egg whites
  • 3 drops pink gel colouring

Buttercream

  • 50g butter, softened
  • 100g icing sugar
  • 1tsp rose water
  • 5-6 drops pink colouring

Method

  1. Sift icing sugar and almonds through a sieve, they need to be fine, any that aren’t fine discard.
  2. Then in another bowl whisk the egg whites and caster sugar to stiff peaks.
  3. Add the gel colouring and mix well – only use gel!
  4. Then put the almond mixture into the meringue mixture and fold in thoroughly.
  5. Draw circles on a piece of baking paper, turn over and pipe the mixture into the circles.
  6. Once piped, bang the tray on the worktop a few times to get rid of any air bubbles.
  7. Then leave them to stand for about half an hour until it’s not sticky to touch.
  8. Bake at 150 degrees for about 8 minutes.
  9. Leave to cool.

For the buttercream

  1. Mix the icing sugar with well softened butter, then add the Rose water and colouring until the consistency you want.
  2. Once the macaroons are cooled, sandwich them together with the buttercream and enjoy!
