This recipe is a great way to use up leftover beef from your weekend dinner, you could even use pork or lamb. Although, in this house we don’t always have leftovers!

Buying a bigger piece of meat not only gives you the added benefit of a super fast leftover meal (this one takes just 15 minutes!!), but it cooks more evenly and is so hard to make dry, say hello to juicier, tastier roasts.

  • Leftover Beef, cubed

  • 1 red pepper, 1cm dice
  • 1 onion, 1cm dice
