After the success of my double chocolate and salted caramel crunch cookies, I was asked by a colleague to try white chocolate brownies, better known as blondies.
Now I’ve seen pictures of them all over Pinterest but I’d never thought of making them before and I really don’t know why!
They were really easy to make, I wouldn’t say they had the full texture of chocolate brownies though, still delicious just different.
They had a crispy outing and a fudgy inside but not as rich so you could eat more 😋 that’s definitely something I can get on board with!
And the verdict of said colleague…chants of ‘we want more brownies’….
Ingredients
- 1 cup softened salted butter
- 1 1/2 cups caster sugar
- 1tsp vanilla extract
- 2 eggs
- 2 1/4 cups self raising flour
- 225g white chocolate, chopped
- 100g milk chocolate chips
Prep Time: 15 minutes Cooking Time: 45-50 minutes Total Time: 60-65 minutes Makes: 16 – 20 squares
Method:
- Pre-heat the oven to gas mark 4.
- In a large heat proof bowl, melt the butter and white chocolate together, either in the microwave (stir after every 20 seconds) or over a boiling pot of water, stirring frequently.
- Stir in the sugar and vanilla until combined, then mix in the eggs.
- Add the chocolate chips to the sieved flour (this ensures the chips don’t fall to the bottom of the batter), then slowly add to the batter, combining completely.
- Line a baking tray (around 9×9) with baking paper and bake for 45-50 minutes – until a toothpick comes out clean.
- Allow to cool slightly before devouring!
