For the ultimate treat one thing comes to mind…Millionaires shortbread.
This one uses oat biscuits for a extra crunchy base with a moreish caramel centre.
You won’t be able to stop at 1!
Ingredients
For the Shortbread
- 300g oat biscuits
- 175g salted butter
For the Caramel
- 1 tin (397g) condensed milk
- 2tbsp golden syrup
- 60g caster sugar
- 120g butter
For the Chocolate
- 200g dark chocolate
- 150g milk Chocolate
Total Time: 15 minutes Setting Time: 1 hour + Makes: 15
Method
- Line a 9 inch baking pan with greaseproof paper.
- Crush the biscuits to fine pieces, melt the butter in a pan and add the crumbs. Mound the mixture to the baking pan and put in the fridge to cool.
- For the caramel add all the ingredients to a saucepan and stir over low heat until smooth and a deep caramel colour. Allow to cool for a few minutes then pour over the biscuit mixture, transfer back to the fridge to fully cool.
- Melt the chocolate in a microwave proof bowl, stopping every 15 seconds to stir. Pour over the cooled caramel and put back in the fridge. Cut into squares when fully set.
