For the ultimate treat one thing comes to mind…Millionaires shortbread.

This one uses oat biscuits for a extra crunchy base with a moreish caramel centre.

You won’t be able to stop at 1!

Ingredients

For the Shortbread

  • 300g oat biscuits
  • 175g salted butter

For the Caramel

  • 1 tin (397g) condensed milk
  • 2tbsp golden syrup
  • 60g caster sugar
  • 120g butter

For the Chocolate 

  • 200g dark chocolate
  • 150g milk Chocolate

Total Time: 15 minutes       Setting Time: 1 hour +       Makes: 15

Method

  1. Line a 9 inch baking pan with greaseproof paper.
  2. Crush the biscuits to fine pieces, melt the butter in a pan and add the crumbs. Mound the mixture to the baking pan and put in the fridge to cool.
  3. For the caramel add all the ingredients to a saucepan and stir over low heat until smooth and a deep caramel colour. Allow to cool for a few minutes then pour over the biscuit mixture, transfer back to the fridge to fully cool.
  4. Melt the chocolate in a microwave proof bowl, stopping every 15 seconds to stir. Pour over the cooled caramel and put back in the fridge. Cut into squares when fully set.
