Many people only pancakes on Pancake Day which is a Christian festival Shrove Tuesday, the day before Ash Wednesday (the first day of Lent). Shrove Tuesday is exactly 47 days before Easter Sunday, which is a moveable feast based on the cycles of the moon. Therefore the date can be anywhere between 3 February and 9 March inclusive. It is related to Mardi Gras and is also know (aptly!) as Fat Tuesday.

How to Make Pancakes
Ingredients
- 100g plain flour
- 2 eggs
- 300ml semi-skimmed milk
- Olive oil for frying
- pinch salt
Method
Heat the pan, medium high. A little oil in the centre and swirl round. Pour mixture in centre to about half diameter of a full-size frying pan, quickly swirl to edge. Toss when dry enough not to stick and cook other side. (About 1 minute each side)
Add sugar and orange or lemon juice to taste, roll up and add a bit more sugar and juice.
Makes between 5 and 7 according to thickness and the size of your pan.
