So, a couple of days ago we came back from holiday in Disney world and I am having MAJOR holiday blues. *sob*
But to keep the American dream alive just a little bit longer I was thinking what can I bake…
Well, whats more American than peanut butter and jelly (jam) and cupcakes?!
Ingredients
- 150g self raising flour
- 150g caster sugar
- 150g softened butter
- 3 eggs
- 1tsp vanilla extract
- 1tbsp milk
- 2tbsp peanut butter (I used crunchy)
- 1 1/2tbsp seedless raspberry jam
For the Frosting
- 75g softened butter
- 150g icing sugar
- 2tsp peanut butter
- 1 1/2tsp seedless raspberry jam
- 1tsp vanilla extract
- 1tbsp milk
- 2-3 drops pink natural colouring
Prep Time: 15 minutes Cooking Time: 15-20 minutes Total Time: 30-35 minutes Makes 12 Cupcakes
Method
- Preheat the oven to gas mark 4.
- Sieve the sugar into the butter and cream together until light and fluffy.
- Mix half the beaten eggs into the mixture followed by a third of the flour. Repeat until all is combined, finally stir in the vanilla, milk, peanut butter and jam.
- Place 12 cupcake cases on a baking tray and spoon the mixture evenly.
- Bake for 15-20 minutes until a skewer comes out clean.
For the Frosting
- Beat the butter and sugar together until smooth then mix in the remaining ingredients.
- Wait until cupcakes are fully cool (I know it’s hard!) before icing. Yum!
