Pitta Bread is fun to make and is very versatile. You can fill with English or Asian foods.
Ingredients
- 500g strong white flour
- 1 tbsp salt
- 50g caster sugar
- 50ml olive oil
- 30g yeast
- 300ml water
Method
- Put all the ingredients into a bowl and mix. When a dough begins to form, tip out onto a lightly floured surface and knead for 5 minutes. Put back in the bowl, cover with cling film and rest the dough for 1 hour.
- Preheat the oven to 240C/gas mark 9 and put a lined baking tray inside to heat up. Tip the dough out onto the table and divide into 100g pieces. Using a rolling pin, roll out the dough to a pitta shape and about 1 cm thickness.
- Leave to rest on the table for 5 minutes, then place on the hot baking tray in the oven and bake for 5– 10 minutes.
- The bread will balloon up (it always reminds me of a circus strong man blowing up a hot water bottle!) When you bring them out of the oven they will collapse and form the Pitta pockets.
