This is a simple recipe I like to call Shrimpanese, I made it up quite a few years ago so please don’t judge (!) 😋

You can swap the shrimp for chicken or prawns if you wish, it will still be scrumptious…

Ingredients

  • 2 garlic cloves, chopped
  • 400g spaghetti
  • 400g can chopped tomatoes
  • 2tbsp tomato puree
  • 200g sweetcorn
  • 4 mushrooms, chopped
  • 300g cooked shrimp
  • sprinkling of cheddar cheese

Prep: 5 minutes       Cooking Time: 20 minutes       Total Time: 25 minutes       Serves: 4

Method

  1. Add 1/2 tablespoon oil to a large frying pan, add the garlic cloves and mushrooms and fry until soft.
  2. Put the pasta in a pan of boiling water and cook according to packet instructions.
  3. Add the chopped tomatoes and purée to the garlic and bring to the boil. Turn down to a simmer, season with salt and pepper, leave to thicken stirring occasionally (5-10 minutes).
  4. Stir the sweetcorn and shrimp to the sauce and cook until heated through.
  5. Serve over the pasta with a sprinkling of grated cheese.
