An easy to make cake.
Ingredients:
- For the cake:
- 175g self-raising flour
- 165g caster sugar
- 175g butter
- 5 tablespoons milk
- 2 medium eggs
- Grated rinds of 1 to 2 large oranges
- For the topping:
- 50g caster sugar
- juice of 1 orange
Method:
- Grease (or line with baking paper) a 1lb (450g) loaf tin. Preheat oven to gas 4.
- Put flour, sugar, butter, milk, eggs and orange rind into a large mixing bowl. Whisk until all ingredients are combined.
- Pour into loaf tin and bake for 40-45 minutes or until golden. The top will probably crack slightly but this is OK.
- Just before the cake comes out of the oven, heat the sugar and orange juice together in a small saucepan.
- Remove cake from the oven and make some holes in the top with a cocktail stick and pour over the orange juice mixture (while the cake is still in the tin) and leave until cold before removing the cake from the tin.
You can make cupcakes instead – makes about 12. Cook for 25/30 minutes.
