I love pasta! I could eat it all day long, so I’m constantly trying out new recipes, this Cajun Chicken is a delicious mid week meal with minimal ingredients.
Ingredients
- 360g pasta (any type)
- 300g chicken, diced or thin strips
- 1 red pepper, medium dice
- 300ml single cream
- 250ml chicken stock
- 1 tbsp Cajun spices

Method
- Cook the pasta according to directions on the pack
- Meanwhile, add 1 tbsp oil to a large frying pan along with the chicken and pepper.
- When the chicken is almost cooked add the cream, stock and Cajun spices and boil then simmer until the sauce begins to thicken.
- Put the cooked pasta into the sauce, stir well and serve.
