I love pasta! I could eat it all day long, so I’m constantly trying out new recipes, this Cajun Chicken is a delicious mid week meal with minimal ingredients.

Ingredients

  • 360g pasta (any type)
  • 300g chicken, diced or thin strips
  • 1 red pepper, medium dice
  • 300ml single cream
  • 250ml chicken stock
  • 1 tbsp Cajun spices

Prep Time: 5 minutes       Cooking Time: 15 minutes       Total Time: 20 minutes       Serves: 4

Method

  1. Cook the pasta according to directions on the pack
  2. Meanwhile, add 1 tbsp oil to a large frying pan along with the chicken and pepper.
  3. When the chicken is almost cooked add the cream, stock and Cajun spices and boil then simmer until the sauce begins to thicken.
  4. Put the cooked pasta into the sauce, stir well and serve.
