Scones are a traditional afternoon tea snack. They’re tasty and dead-easy to make. If you want a lighter version and are willing to give up a bit of the taste, use margarine and skimmed milk instead of butter and full milk.
Makes 9-12 scones.
Ingredients:
- 225g Self-raising flour.
- 40g Butter.
- 1½ tbsp Castor sugar.
- 150ml milk.
- Pinch salt.
- Optional: 30g mixed fruit (Raisins/Sultanas etc).
Method:
Rub the butter into the flour.
Mix in the salt and sugar. Add the mixed fruit if you’re making fruit scones.
Add the milk and mix up (it’s good in a food mixer) to a soft dough.
Knead very lightly, roll out to 2cm (¾ inch) thick and cut 5cm (2 inch) circles.
Bake in preheated over, Gas 7/220C/425F for about 12-15 minutes until risen and lightly brown on the top.
Leave to cool on a wire rack but they taste delicious warm or cold. Spread with butter, Jam and clotted cream. Nice!
