I never used to like mangoes, but recently I have become obsessed with them! This dish is perfect to double or treble up for a summer bbq – make sure to get a perfectly ripe mango and avocado though.

Ingredients:

  • 1 mango, small dice
  • 1/2 avocado, small dice
  • 1/2 red onion, finely chopped
  • zest of half a lime

Prep Time: 10 minutes       Cooking Time: No Cooking!       Total Time: 10 minutes + chilling

Method

  1. Add the cubed avocado and mango to a bowl.
  2. The best way to prep the mango is to cut down both sides of the mango pit, then make lengthwise and crosswise cuts in each side. Invert the mango and peel each cube off. Voila!
  3. Add the diced onion, zest of the lime & a little salt and mix together – chill for at least half an hour before serving.
