Since coming back from Disney world I have been pining for the sugary goodness that came out of every food court over there. But there are two things I miss more than anything – cream cheese pastry (omg heavenly!!) and mini banana nut loaves, which I have to say are the easier of the two… I even found the raw batter of these little treasures better than cake mix and cookie dough, I was surprised I even managed to get some in the tin.

As I didn’t have a mini loaf tin I improvised with a muffin tin and I actually think they came out super cute and went down a treat!

Ingredients:

  • 1 1/4 cup caster sugar
  • 1/2 cup softened salted butter
  • 1/2 cup Jersey or whole milk
  • 1 tsp vanilla extract
  • 2 1/2 cups plain flour
  • 1 tsp baking powder
  • 100 grams chopped walnuts

 

Method

Pre-heat oven to gas mark 4.

In large bowl, mix sugar and butter by hand until mostly mixed, then stir in the eggs until well blended. Add the bananas, milk and vanilla until smooth.

Sift in the flour, baking powder and nuts until fully blended, then divide the batter evenly between the muffin tin.

Bake for 30-35 minutes, until a skewer comes out clean, leave to cool and enjoy!
