This is a simple recipe I like to call Shrimpanese, I made it up quite a few years ago so please don’t judge (!) 😋
You can swap the shrimp for chicken or prawns if you wish, it will still be scrumptious…
Ingredients
- 2 garlic cloves, chopped
- 400g spaghetti
- 400g can chopped tomatoes
- 2tbsp tomato puree
- 200g sweetcorn
- 4 mushrooms, chopped
- 300g cooked shrimp
- sprinkling of cheddar cheese
Prep: 5 minutes    Cooking Time: 20 minutes    Total Time: 25 minutes    Serves: 4
Method
- Add 1/2 tablespoon oil to a large frying pan, add the garlic cloves and mushrooms and fry until soft.
- Put the pasta in a pan of boiling water and cook according to packet instructions.
- Add the chopped tomatoes and purée to the garlic and bring to the boil. Turn down to a simmer, season with salt and pepper, leave to thicken stirring occasionally (5-10 minutes).
- Stir the sweetcorn and shrimp to the sauce and cook until heated through.
- Serve over the pasta with a sprinkling of grated cheese.
