Thai green curry has to be one of my favourites meals! I love Thai food! But to make your own paste is costly and for a family on a budget just isn’t savvy enough, so there is nothing wrong with buying it in a jar – it speeds up the process too, there’s a plus 👍🏻

You can add more or less Thai paste to taste, I don’t like mine too hot so I only add a slight spice.

To make it the ultimate Friday night dinner, serve with rice and lots of prawn crackers!

Ingredients

  • 300g chicken
  • 1 tin new potatoes, cut into large bite sized pieces
  • 150g green beans, cut into quarters
  • 3tbsp green Thai curry paste
  • 1 tin of coconut milk (400ml)
  • 2 cups rice to serve

Prep Time: 5 mins       Cooking Time: 25 mins      Total Time: 30 mins       Serves: 4

Method

  1. Heat a tablespoon of oil in a medium pan, meanwhile cut the chicken into bite sized pieces and add until almost cooked.
  2. In another pan, boil the green beans until also almost cooked.
  3. In a third pan, cook the rice according to the packet directions.
  4. Add 3 tbsp (or to taste) of green Thai curry paste to the chicken and stir well.
  5. Pour the coconut milk into the medium saucepan along with the green beans, simmer until the chicken and beans are cooked through.
  6. Serve and enjoy!
