Thai green curry has to be one of my favourites meals! I love Thai food! But to make your own paste is costly and for a family on a budget just isn’t savvy enough, so there is nothing wrong with buying it in a jar – it speeds up the process too, there’s a plus 👍🏻
You can add more or less Thai paste to taste, I don’t like mine too hot so I only add a slight spice.
To make it the ultimate Friday night dinner, serve with rice and lots of prawn crackers!
Ingredients
- 300g chicken
- 1 tin new potatoes, cut into large bite sized pieces
- 150g green beans, cut into quarters
- 3tbsp green Thai curry paste
- 1 tin of coconut milk (400ml)
- 2 cups rice to serve
Prep Time: 5 mins Cooking Time: 25 mins Total Time: 30 mins Serves: 4
Method
- Heat a tablespoon of oil in a medium pan, meanwhile cut the chicken into bite sized pieces and add until almost cooked.
- In another pan, boil the green beans until also almost cooked.
- In a third pan, cook the rice according to the packet directions.
- Add 3 tbsp (or to taste) of green Thai curry paste to the chicken and stir well.
- Pour the coconut milk into the medium saucepan along with the green beans, simmer until the chicken and beans are cooked through.
- Serve and enjoy!
